Spice up your rice

If your family cries out "Chicken, again?" when you bring dinner to the table, then it's probably time to rev things up a bit.

And the USA Rice Federation has a variety of recipes to help you "rice to the occasion." National Rice Month kicks off on Saturday, so why not try such elegant dishes as mandarin orange rice and shrimp lettuce wraps or red curry coconut rice with pork? Both call for a few creative ingredients and only take about 30 minutes of your time.

"U.S. shoppers are increasingly exposed to new flavors and cuisines through travel, ethnic restaurants and cooking shows -- encouraging them to experiment more in their own kitchens," said Judy Rusignuolo, director of consumer education and foodservice marketing for USA Rice Federation.

For the ninth annual Rev Up Your Rice recipe contest, the federation received more than 1,300 recipes from cooks around the nation.
